1. Blend the cream, egg whites, fromage blanc/ greek yogurt, and icing sugar until smooth. Pour into a siphon and charge with two gas cartridges. 2. Prepare a vanilla-infused syrup using the vanilla pod. Once lukewarm, pour over the berries and let them macerate for 2 hours. 3. For the vinaigrette, mix the olive oil, crushed olives, vanilla seeds, and a few drops of raspberry vinegar. 4. To plate: drain the berries (keep the syrup aside), spoon them onto the plate. Add a dollop of the fromage blanc/greek yogurt mix from the siphon. Drizzle with the vinaigrette and finish with a few lemon balm leaves.
